Banana Jam
Ingredients:
2 ½ lb of peeled bananas.
2 ½ lb of sugar.
8 ounces of pineapple juice.
Juice of 2 lemons.
Directions:
Place half (1 ¼ lb) of the peeled bananas in a large saucepan and mash with a potato masher.
Slice up the other half of the bananas, and add them to the pan.
Stir in the juice of the lemons and the 8 oz of pineapple juice.
Add the sugar and heat on a low setting until the sugar has dissolved.
Bring to the boil for about 3 minutes; then allow to cool.
Pour into a jam jar or other suitable container.
Cover and seal.

Banana
Ingredients:
1/2 cup butter, room temperature.
1 cup granulated sugar.
2 large eggs.
2 large bananas, ripe, mashed.
1 teaspoon vanilla extract.
2 cups all-purpose flour.
1 teaspoon salt.
1/2 teaspoon baking soda.
1/2 cup chopped pecans or walnuts.
Directions:
Cream with an electric hand-held mixer.
Beat in eggs, one at a time,
And vanilla and beat until smooth.
Stir the flour mixture intoalte rnating
Stir until dry ingredients are moistened, then gently stir in chopped nuts.
Spoon banana muffin
Cool muffins by turning them out onto a rack to cool longer.

Banana Nut Muffins recipe
Ingredients:
2 large eggs.
2 large ripe bananas, mashed.
1 stick of butter, softened.
2 cups of all-purpose flour.
1 cup of granulated sugar.
1 cup of buttermilk.
½ cup of chopped pecans.
1 teaspoon of vanilla extract.
1 teaspoon of salt.
1 teaspoon of baking powder.
Directions:
Preheat your oven to 400°F (200°C) and grease 12 standard-size muffin-pan cups.
One at a time, add the eggs, beating thoroughly after each is added.
Beat in the bananas until the mixture is smooth.
Add the flour mixture and the buttermilk to the egg mixture until the dry ingredients are just moistened.
Stir in the chopped pecans and vanilla extract.
Spoon the batter into the greased muffin pans, filling about two-thirds.
Bake for around 20 minutes or until golden brown.

Banana Pancakes recipe
Ingredients:
4 medium eggs, separated.
2 cups of flour.
1 cup of milk.
1 cup of pureed banana.
1 teaspoon of vanilla.
Pinch of cinnamon.
Cooking Oil.
Directions:
Beat the egg whites until they are stiff; then refrigerate.
Mix the flour, egg yolks, and milk.
Add the banana puree and mix.
Add the vanilla and cinnamon, then mix thoroughly.
Coat a suitably sized skillet with cooking oil; then heat.
Fold 4 tablespoons of egg white into 1 cup of pancake batter.
Pour into a hot skillet.
Cook, turning once. Repeat until all batter is used.

Banana Pudding recipe
Ingredients:
1 (9-inch) biscuit crumb crust.
1 (4 serving size) package of chocolate or vanilla instant pudding, along with milk as the package directs.
3 or 4 bananas, thinly sliced.
Whipped topping or whipped cream.
Shaved chocolate for garnish.
Directions:
Prepare pudding following package directions.
Spread into the biscuit crust.
Top with slices of banana.
