Creamed Dried Beef

Ingredients:
1/4 lb of dried beef.
2 tablespoons of butter.
1 1/2 tablespoons of flour.
1 cup of milk.
Hot buttered toast.

Preparation Instructions:
Pick meat into small pieces, brown in butter.

Sprinkle on flour and stir. Slowly add the milk.

Cook until slightly thickened. When it boils, pour it over a platter of
Toast and serve immediately.

Chili-Beef-Potato Soup recipe

Ingredients:
1/2 lb of ground beef.
1/2 cup of chopped onion.
1/2 cup of chopped celery.
1 can (16 ounces) of tomatoes, cut up.
2 cups of potatoes, peeled and diced.
1 can (10 ounces) of condensed beef broth.
1 1/3 cups of water.
1 teaspoon of chili powder.
1/2 teaspoon of salt.
1/2 teaspoon of Worchestershire sauce.
1 cup of cooked peas.

Preparation Instructions:
Brown the beef in a saucepan; drain off the fat.

Add the onion and the celery and cook until the vegetables are tender-crisp.

Cover and cook until the potatoes are tender (approximately 12-15 minutes).

Stir in the peas and heat through.

Serve.

Cheddar-Filled Beef Rolls recipe

Ingredients:

1cupCheddar, Sharp,
Shredded
1/4cupBread Crumbs, Dry
1/4cupGreen Pepper,
Chopped

Preparation Instructions:
Combine the barbecue sauce,
egg, and salt, blending well. Pat the
rectangle on foil or waxed paper. Combine the cheddar cheese, bread crumbs,
green pepper, and water, and pat the cheese mixture over the meat mixture.
Roll up, roll fashion, starting at the narrow end. Chill for several hours or
overnight. Slice into 6 servings and bake in a shallow casserole in a
preheated 350 degree F. oven for 25 to 30 minutes. Serve hot.

Cajun Beef and Rice recipe

Ingredients:
1/2
pound ground beef
1 medium stalk celery — chopped (1/2 cup)
1 medium
onion — chopped (1/2 cup)
2 teaspoons Cajun or Creole seasoning

cups uncooked instant rice
1 cup water

Beef is brown, and vegetables are tender. Stir in the remaining
ingredients.
Reduce the heat to medium-low. Cover and cook for about 5 minutes or
until rice
is tender.

Ingredients:
1 pound
extra-lean ground beef
1/2 cup chopped onion (about 1 medium)
2 cups
beef broth
2/3 cup uncooked barley
2 teaspoons chopped fresh
oregano
