Bay Scallop Pasta recipe

Bay Scallop Pasta ingredients list:
1 lb of bay scallops.
½ lb of penne pasta.
2 oz of melted butter.
2 tablespoons of olive oil and 2 teaspoons of olive oil.
2 tablespoons of dry vermouth.
2 tablespoons of chopped shallots.
1 ½ tablespoons of chopped parsley.
1 tablespoon of lemon juice.
1 ½ teaspoons of minced garlic.
Salt and pepper, to taste.

Instructions for Bay Scallop Pasta:
Cook the penne pasta as directed on its packaging. Drain and keep warm.

Turn on the broiler. Combine all of the other ingredients, except the scallops, in a suitably sized bowl. Season with salt and pepper, then mix thoroughly.

Arrange the scallops in a broiler-proof dish.

Pour the butter mixture over the top of the scallops; then toss.

Broil for 3-4 minutes, then turn and broil another 2-3 minutes.

Serve over the cooked pasta.

Beef Lasagne recipe

Beef Lasagne ingredients list:
1 chopped medium onion
2 tablespoons of olive oil.
1 clove of garlic.
1 lb minced beef.
2 small tins of tomato paste.
2 teaspoons of salt.
¼ teaspoon of ground pepper.
½ teaspoon of dried rosemary.
3 cups of hot water.
½ lb ricotta cheese.
½ lb lasagne noodles.
½ lb grated mozzarella cheese.

Instructions for Beef Lasagne:
Fry the onion and garlic in hot oil until softened, and add the beef.

Cook whilst stirring until browned and crumbly.

Mix in salt and pepper, tomato paste, rosemary, and hot water.

Simmer for about 30 minutes (uncovered).

In a shallow baking dish, pour a thin layer of sauce, half the noodles, mozzarella, and ricotta cheese.

Repeat with half the remaining sauce, followed by the noodles.

Add the last of the sauce and cheese.

Bake for 30 minutes at a high heat. Leave to stand for 15 minutes before cutting.

Cheesy Stuffed Spinach Shells recipe

Cheesy Stuffed Spinach Shells ingredients list:
1 package extra-large pasta shells
1 cup shredded mozzarella cheese, divided
½ cup ricotta cheese
1 cup finely chopped fresh spinach leaves
½ cup marinara sauce
½ cup pumpkin puree
1 tablespoon minced garlic
½ teaspoon nutmeg
½ teaspoon salt
¼ teaspoon ground black pepper

Instructions for Cheesy Stuffed Spinach Shells:
1) Preheat oven to 350°F. Lightly grease a 1 ½-quart baking dish.

2) Cook pasta according to package directions. Drain and set aside.

3) Meanwhile, in a medium bowl. Combine ½ cup of mozzarella cheese, ricotta cheese, and spinach.

4) In another medium bowl, whisk together marinara, pumpkin puree, garlic, nutmeg, salt, and pepper.

5) To assemble, spread ½ cup of the marinara mixture along the bottom of the baking dish. Arrange pasta shells evenly along the bottom of the pan; stuff with cheese mixture. Top with remaining marinara sauce mixture and sprinkle with remaining ½ cup mozzarella cheese.

6) Cover and bake 30 minutes, until bubbly and the top is golden. Cool 10 minutes before serving.
