Mashed Potato Cakes recipe
These tasty, savory cakes are perfect for breakfast or a mid-day snack. Use whatever kind of mashed potatoes you have on hand for this, whether they are white potatoes, sweet potatoes, or whether they contain apples, spices, or herbs. You can’t go wrong!

Ingredients:
2 cups mashed potatoes or sweet potatoes
1 egg, lightly beaten
¼ cup flour
2 tablespoons grated Cheddar or Parmesan cheese
2 tablespoons butter
Sour cream, applesauce, or cranberry sauce, for serving
Directions:
1) Preheat oven to 400°F. Lightly grease a baking sheet.
2) In a large bowl, combine mashed potatoes, eggs, flour, and cheese. Divide the mixture into 6 equal portions, and shape each into a thick patty. Transfer patties to the prepared baking sheet. Bake 15 minutes, flip over, and bake an additional 15 minutes. Serve warm with sour cream, applesauce, and/or cranberry sauce.
Homemade Potato Chips recipe
The best thing about making your potato chips at home is that you can make them however you want. If you like thin potato chips, cut them very thin and fry for less time; for thicker do just the opposite. Makes about 6 cups of potato chips.
Ingredients:
2 large russet potatoes
peanut or corn oil as needed for deep frying
salt and pepper, to taste
Directions:
Slice the potatoes very thin, using a sharp knife or a mechanical mandolin.
Heat the oil over medium heat until it reads 360F on an oil thermometer, or test the oil by dropping in one potato slice.
Drop the potatoes into the oil and stir them around with a spoon.
Cook until crisp and just beginning to brown, about 4 minutes.
Remove with a slotted spoon and place on a plate covered in paper towels. Immediately sprinkle with salt and pepper.

Ingredients:
4 large potatoes
2/3 cups of butter
2/3 cups of flour
1 ½ quart milk
4 green onions, chopped
1 cup of sour cream
2 cups of crumbled bacon
5 oz of grated cheddar cheese
Salt and freshly ground black pepper, to taste
Directions:
Preheat oven to 350 degrees F (175 degrees C). Bake potatoes until cooked through. Remove from oven and set aside until cool enough to handle. Cut in half length-wise and scoop out the center, and set aside. Roughly chop half of the potato peels and discard the rest.
In a large, heavy-bottomed saucepan, melt butter over low heat. Gradually blend in the flour until thoroughly combined. Slowly add milk, whisking constantly until completely combined and smooth.
Add salt and pepper to the roux. Continue to simmer over low heat, stirring constantly. Whisk in the potato. Add chopped green onions and potato peels and stir to combine.
